200ml newly squeezed lemon juice
500g granulated sugar

To make the Premix (makes 850ml, enough for 10)

150ml peach-flavored liqueur
200ml clementine syrup (as made above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch

Instructions

For the Cordial: Put the listed items in a saucepan, heat until it reaches a gentle boil, stirring until the sugar dissolves. After that, turn off the burner allowing it to cool down completely. Pour to a clean bottle, cap it and refrigerate it in the fridge, where it will keep for around four weeks.

Preparing the Cocktail Base: Pour the specified liquid ingredients into a big jug, leave to sit for an hour, then strain , ideally through cheesecloth, making it completely strained.

To serve: Add 85ml of your batch mix to a mixing glass packed with ice, and agitate gently for one minute until cold. Pour into a chilled martini glass or equivalent, decorate with a few cranberries and finish with a brief mist of the essential oil above the glass.
